Cabrales is a natural cheese made in the artisan tradition by rural dairy farmers in the county of Cabrales which is located in the heart of the Picos de Europa mountain range in Spain. Is made using milk from cows, sheeps and goats that have grazed on high mountain pastures and matured in natural limestone caves which favour the development of penicillium molds, yielding veins of blue-greenish color. Unique, long lasting and piquant taste, excellent with fresh bread or crackers. Makes a beautiful and flavorful addition to a tapas plate.

Great for sauces to accompany meat or vegetable dishes. Best served to end a perfect meal with fruit trays.
