Valdeazul is a rich, creamy, intensely-flavored cow’s and goat’s milk blue cheese wrapped in sycamore leaves, which contributes to their distinctive appearance and complex flavor. It is an off-white color, with many green-grey veins running through it and holes throughout. It is a very strong-flavored cheese, tangy and a bit spicy. Similar to Valdeazul, its major difference is that it doesn’t have a I.G.P. It can be used for any sauce requiring blue cheese. Also delicious with smoked and cured meats and divine melted on top of a hanger steak. Try it with a tawny port or a sweet sherry. You can also enjoy it with a dry white or red wine (not Crianza).
