The Montcabrer is a semi firm goat cheese of new creation from Catalonia. The cheese is first washed with vegetable oil and charcoal and then allowed to age for two to three months. It has a gray rind as surface mold mingles with the charcoal. The cheese has a lactic bite, but is also rather sumptuous and unctuous. The cheese is earthy, full flavored and slightly tangy at the end. The Montcabrer has a lot of applications on the cuisine. From accompanist of meats, filling for vegetables, or as an ingredient of a good salad. Pairs well with Pinot Noir. This is definitely a cheese for goat lovers looking for new flavors.
