Jamón Serrano

Serrano ham comes from the hind legs of white-skinned pigs. Its preparation is simple, given that only sea salt, curing salts and time are used. The hams undergo a short salting process, whereby the sea salt acts as a stabiliser and dehydrator of the meat. Afterwards, the hams are hung in rooms called “secaderos” (curing sheds). As from this point, the right combination of temperature, humidity, air and time, monitored by master ham specialists, is what transforms the pork meat into Serrano ham.

It is rich in proteins, phosphorus and calcium and contains appreciable quantities of iron and vitamins B1 and B2. It is a light an easily digestible food.
